Marvelous Mince Meat: Meat Loaf

Alright I can hear what you are all crying out for, what ever happened to Marvelous Mince Meat? Well life happened, also its very hard to take an appealing photo of meat so with my new app Little Moments by Fat Mum Slim  I have renewed passion to share the wonders of mince meat. I know a tad sad its not gourmet but its tasty food that fills that family up, not full of rubbish and doesn't break the bank.
 Ok Meat Loaf its an old classic it can have a pretty bad wrap and I don't think my photos have helped my case but this is a tasty dinner that has become a family favoirite in my house hold.

Glazed Meat Loaf
500gr beef mince
4 rashes of bacon
1 onion
2 slices of bread
2 cloves of garlic
1 carrot
1 zucchini
1 egg (I use egg replacer)
2 teaspoon veggie stock powder
1/3 cup BBQ sauce
2 tablespoon Worcestershire sauce

Step 1: Put onion in food processor and pulse till roughly chopped. Add chopped bacon, bread and minced garlic, pule until combined in a thick paste. 
Step 2: Grate carrot and zucchini. Mix by hand with the remainder of ingredients apart from the sauces.
Step 3: Shape the meat loaf on a baking tray.
Step 4: Combine the BBQ sauce and the Worcestershire sauce in a small bowl. Spoon about half the glaze over the meat loaf and set aside in the fridge for at least 30min (I often make the meat loaf to this stage in the afternoon and only put it in the over closer to dinner time).
Step 5: Before putting it in the over put the rest of the glaze on. Will take about and hour to cook at 180 degrees and is best left covered for 10 min before cutting up. I serve it with mash potatoes and steamed veggies to complete the retro winner.
