Muesli Cookies


My family loves these, my son is a fuss eater and he gobbles these up no worries. There is a fair bit of butter and sugar but there is also some goodness from dried fruit and seeds so I feel like they are a pretty good treat. They are so easy to make my son has been helping make them since he was two.


1/2 cup rolled oats
1/2 cup desiccated coconut
1/4 cup flax seeds
1/4 cup sesame seeds
1/4 cup sunflower seeds
1/4 cup chopped dried apricots
1/3 cup sultans
1 cup SR flour
1 cup plain wholemeal flour
1 cup brown sugar
3 tablespoon golden syrup
150gr melted butter
1/2 teaspoon bicarb soda mixed with 2 tablespoons hot water

Put all ingredients in large mixing bowl. Mix well, you may need to add a touch more water if it is to dry but the mixture should be just holding together. Roll small balls and place on the tray bake at a moderate oven for about 20min or until golden brown.
