Now I understand that it is January and I should posted these pics at least 6 weeks ago but hey I not perfect and got completely over whelmed in the lead up to Christmas and frankly I am pleased the kids and I remained feed and clothed through out the silly season, I had not only had plans on making a heap of the presents I gave out time and energy was not on my side.It was an extra special Christmas for us as it was little miss first Christmas and it was the first time in several year that my sister and her family was in the same state as us so we had a big noisy happy Christmas. But I did manage a couple of Christmas project, one was these niffty bibs which my dear husband made note "they look a bit festive?" yep that was the point. And I did manage to make a tone of ginger bread which made gifts for friends, staff at my sons school and others that I like to share the Christmas joy with.
Ginger Bread
125gr soft butter
1/2 cup firmly packed brown sugar
1/2 cup golden syrup
1 egg yolk
2 1/2 cup plain flour
1 tablespoon ground ginger
1 teaspoon mixed spice
1 teaspoon bi card soda
step 1: beat butter and sugar until light and fluffy
step 2: beat in golden syrup and egg yolk
step 3: stir in dry ingredients, when roughly incorporated knead on a lightly floured surface. Wrap in cling wrap and refrigerate for 30min.
Step 4: roll dough between sheets baking paper, then cut out to desired shape.
Step 5: When placing on lightly greased tray allow 10mm for spreading, bake in a moderate oven until golden brown.
Royal Icing
2 eggs whites
3 cups pure icing sugar (sifted)
Beat egg whites until soft peaks form. Gradually add sifted icing sugar, beat well between additions.
