Bake to school...carrot cake slice

Bake to school, get it? Cause they are going back to school next week. I am so excited that for once I am ahead with my cooking in my freezer is currently 6 slice of egg free chocolate cake and 16 portions of carrot cake slice all for school lunch boxes. Not to mention the pasta sauces and lasagna. We all set for a happy, busy and productive term.

This slice is nice and easy, freezes well and because it has a couple of carrots in it I feel like I am giving my kids some goodness. 

Carrot Cake Slice
 
2 carrots peeled and grated
the zest of one orange
4 eggs (I used egg replacer)
1 teaspoon cinnon
1 teaspoon nutmeg
1 teaspoon bi carb soda 
1 cup rice bran oil
1 1/2 cup SR flour
1 cup brown sugar
1/2 cup water
a handful of sultans

Step 1: Putt all ingreatdiants in a large bowl and mix.
Step 2: Divide mixture into two greased lamington trays.
Step 3: Bake at 180c for about 20min.
Step 4: Leave to cook in the tray then cut it into the desired portions and lift out of the tray with an egg slide.

So easy that the big kids can help...happy bake to school
