Pumpkin Soup

Well winter is well and truly here and in winter i love nothing more than a bowl of thick home made soup. Soup is so easy to make and such a great way to sneak veggies into the kids.

Pumpkin Soup

All the messurments are flexable this is more of a bit of this and a bit of that recipie.
 
1 onion
3 cloves of garlic
oil
1 tablespoon garam masala
2 tablespoon tikka masala paste
half a head of califlower
2 carrots
4 sticks of celery
2 potatoes
1 sweet potatoes
1 pumpkin 
2 liters of stock veggie or chicken
extra water

Step one: Dice onion and sweat down until soft.
Step two: Add in garlic and garam masala,
 fry off.
Step three: Cut all the veggies into roughly the same size and add to the saucepan.
Step four: Add stock and bring to the boil, then reduce heat to a simmer until all the veggies are soft.
Step five: add tikka masala paste. Use a potato masher to roughly mush up the soup before blending.

The soup is great server with toast or over steamed rice and tuna is how my kids love it which makes a meal of it. Also it freezes really well so its great to make a big pot and freeze it until needed.
